(Note: Recipe requires 3 mixing bowls and a 13x9x2 baking dish, requires you to know your colors (i.e.
gold), and requires basic math skills (for doubling the frosting recipe. Also, "tsp" means teaspoon and
"tbsp" means tablespoon.)
Cake Ingredients:
1-2/3 cups sugar
2 cups all-purpose flour
2 eggs
2 tsp. baking soda
½ cup unsweetened applesauce
2 tsp. cinnamon
2 tbsp. vegetable oil
3/4 tsp. salt
2 tsp. vanilla extract
6 cups peeled & chopped tart apples
(peel before chopping)
1½ cups chopped pecans (optional)
Non-stick cooking spray
CAKE: Combine sugar, eggs, applesauce, oil, and vanilla. Beat 2 minutes on medium speed (using a hand
mixer). In a separate bowl, combine flour, baking soda, cinnamon, and salt; add this to applesauce
mixture and beat until combined. Fold in the apples and pecans (this means add the fruit and nut pieces a
little at a time while mixing the batter with a spoon). Transfer to (meaning pour into) a 13x9x2
baking dish coated with non-stick cooking spray. (Spray the baking dish before, not after, you pour in
the batter.) Bake at 350 degrees for 35-40 minutes OR
until top is golden brown. Cool on wire rack.
Frosting Ingredients:
4 oz. cream cheese
2 tbsp. butter
1 tsp. vanilla
1 cup confectioner's sugar
FROSTING: Combine cream cheese, butter, and vanilla in small mixing bowl until smooth. Gradually beat in
confectioner's sugar. (This is for a thin coating of frosting; for a thicker coating, use double the
frosting ingredients.)
